Pineapple Upside-Down Cake

1 Tbsp. butter
1 small can pineapple rings
1 box lemon cake mix
1 oven bag

Open the pot and spread the oven bag out smoothly.  Fold back the top of the bag.

Slice butter and lay the slices around the bottom of the bag.  

Place one pineapple rings along the bottom of the bag and cut the other pieces to fit in the remaining spaces. (Do not completely cover the entire bottom - leave spaces).

Mix the lemon cake mix as per the instructions on the box and pour into the pot filling it slightly over halfway.

Place in a preheated the oven and bake at the temp and time as shown on the box.

Remove from the oven and let cool before sealing the bag. Cut off the excess bag, close the lid. You’re ready to ride. Ride with a friend or group where someone carries the lunch and you carry desert. Enjoy!
